Using a stock pot will ensure you never run out of hot food during peak times. Stock pots are known for their size - with capacities of up to 50 litres and beyond, a large stock pot helps busy commercial kitchens prepare huge quantities of food. Contents are heated rapidly, but allowed to simmer evenly for long periods - remember to use a compatible stock pot lid for optimum heat retention and cooking times.
As the name suggests, a traditional stockpot was used as a boiling pan for making stock or broth. However, the modern stock pot is versatile enough to be used for preparing anything from sauces and soups to pasta and chilli in bulk. For premium strength and reliability, choose a stainless steel stock pot - they're heavy, thick and durable, and also non-reactive so it doesn't matter what food it comes into contact with. An aluminium stock pot is a more lightweight option, and also conducts heat exceptionally well. Using a special stock pot burner will also help to free up space on smaller hobs.
