A commercial blast chiller is an incredibly powerful machine used to cool or snap freeze food quickly and safely. This snap freezing process involves rapidly reducing the temperature of cooked food to preserve its shelf life, flavours, texture and nutritional value. A blast chiller must cool cooked food from 70°C to 3°C in less than 90 minutes, while a blast freezer will cool it from 70°C to -18°C in less than 240 minutes.
