A glaze, whether it’s butter, olive oil or egg whites, needs to be applied consistently to promote an even bake. Using a decent pastry brush that holds liquid until you brush it across your pastry ensures it’s glazed evenly and won’t leave you with pools of liquid.
Choose from pastry brushes made with natural or silicone bristles, each with their own advantages. Natural bristles work well with olive oil and egg washes, while the silicone basting brush is heat-resistant for use with hotter applications. Pastry brushes with a narrow head can be used on smaller pastries while the large pastry brushes work best glazing large surface areas.
