A chinois is a type of conical strainer favoured by professional chefs when creating stocks, sauces, soups and purees. When the smoothest textures are required, a fine mesh strainer is incredibly effective at removing the smallest of solids from bone fragments in stock to pips and seeds in fruit puree. Alternatively, choose a food strainer with a coarser mesh for thicker mixtures. The conical shape makes it even faster and more efficient than a traditional kitchen sieve when draining away excess water and filtering out solids.
