Ingredients for Ben's Buffalo Wings

The beauty of this buffalo wings recipe is its simplicity. Your chicken wings can be prepared quickly, while Frank's Red Hot Original Sauce is the perfect choice for adding that authentic cayenne pepper blend used in Buffalo, NY, back in 1964.

Chicken Wings

  • Chicken wings and drumettes (2kg)
  • Baking powder (5 tsp)
  • Salt (¾ tsp)

Buffalo Sauce

  • Unsalted butter, melted (60g)
  • Frank's Red Hot Original Sauce (½ cup)
  • Salt (¼ tsp)

Dipping Sauce

  • Sour cream (½ cup)
  • Chives (1 bunch)
  • Buttermilk (½ cup)
  • Mayonnaise (¼ cup)
  • Small garlic, minced (2 cloves)
  • Lemon juice (2 tbsp)
  • Salt and black pepper (½ tsp)

How To Make Ben's Buffalo Wings

    Buffalo Wings

  1. Prepare the wings by cutting them into wingettes and drumettes
  2. Place the wings on a rack on a flat baking tray and let them dry in the fridge overnight. Alternatively, pat them dry with paper towels
  3. Place the wings in a large stainless steel bowl. Add the baking powder and salt. Shake the bowl to coat the wings evenly
  4. Place the wings in the fryer basket evenly or in a pan with oil in it as so they do not stick together
  5. Fry the wings until they are cooked and crispy
  6. Let the wings drain off any excess oil and place them in a large stainless steel bowl
  7. Add melted butter into the first squeeze bottle, add your hot sauce to the second squeeze bottle
  8. Coat the wings with the melted butter, then coat with hot sauce and season to taste

    Dipping Sauce

  1. Finely chop the chives
  2. Measure required amounts and add the mayo and sour cream to the bowl
  3. Whisk together and then add chives and garlic with lemon juice ensure desired consistency
  4. Whisk and season to taste
